Spinach Dip for Fatties

I'm a sucker for a good spinach dip. A while back, I found a Cooking Light spinach dip recipe that is really good. It uses low calorie and fat sour cream and cheese and such, and the dip tasted great. I'd make it when people came over, or when I just felt the urge to eat 5 1/2 cups of dip (you know, the average Tuesday).

Last time we had people over for dinner, I wanted to make the spinach dip, but was being cheap and decided that since I already had the full calorie ingredients at the house, I would just use those (cheese, sour cream, cream cheese).

Not surprisingly, the dip was really f'ing good. I think my new fun game will be taking healthy recipes and fattening them up. Can I make this my job? And can my job start at noon, please? Thanks, universe!

Anyway, to make spinach dip that was once light but is now, uh, heavy, here's what you'll need.

Every cooking task requires the help of an assistant dog.



That's a whole bunch of parmesan. Mmmmmm.





Adapted from Cooking Light's recipe:

Yield: 5 1/2 cups (serving size: 1/4 cup dip and about 6 chips--or so Cooking Light says. In these parts, a serving size is more like 2 cups and one bag of chips.)

Ingredients
2 cups (8 ounces) shredded part-skim mozzarella cheese, divided
1/2 cup sour cream
1/4 cup (1 ounce) grated fresh Parmesan cheese, divided
1/4 teaspoon black pepper
3 garlic cloves, crushed
1 (14-ounce) can artichoke hearts, drained and chopped
2 (8-ounce) blocks cream cheese, softened
1/2 (10-ounce) package frozen chopped spinach, thawed, drained, and squeezed dry
1 (13.5-ounce) package tortilla chips (about 16 cups)
Preparation
Preheat oven to 350°. Combine 1 1/2 cups mozzarella, sour cream, 2 tablespoons Parmesan, and next 5 ingredients (through spinach) in a large bowl; stir until well blended. Spoon mixture into a 1 1/2-quart baking dish. Sprinkle with remaining 1/2 cup mozzarella and remaining 2 tablespoons Parmesan. Bake at 350° for 30 minutes or until bubbly and golden brown. Serve with tortilla chips.
